Our Brand
It is our mission to leverage our combined skills, experience, and passion for great design to realize the full potential of every project we take on for ourselves and our clients. Whether we're restoring a historic building, reinventing an underutilized space, designing a custom product, or creating something entirely new from the ground up, each project will be design-driven, financially strategic, and of the quality level we expect the Guilfoil & Wulfson brand to become known for.
The Carriage House
With its prime location and historic vibe, the building begged for an elevated purpose that would bring value to the community. We envisioned the building as a luxury rental property, designed to bring guests the comfort of a hotel with the privacy and individuality of a chic private home. The new look for the space was inspired by the building's 19th century heritage, with careful attention taken to deliver architectural details on a responsible budget for the project at large. In addition to a short-term high end hospitality experience, the building will be perfect for special events including parties, pop-ups, wine-tastings, and more. The event space will eventually benefit from future plans to utilize the private alley as a romantic patio reminiscent of a street-side Parisian cafe.
Saeso
Saeso is the little bar that gets it right. As designers, travelers, and social people, we've been doing our homework on this topic and have created our list of essentials for any great bar. It includes thoughtful decor, good lighting, great music played at the right volume, solid drinks served quickly by a bartender who both knows how to and enjoys doing his/her job well, and clientele you want to be around. The combination of all of these things is a phenomenon hard to find in any US city outside of New York. We think we can make it happen here in Cincinnati.
Saeso will be small enough that it never feels empty, but big enough to feel like there's a crowd when it's full. We will limit our menu to have something for everyone but not too much to choose from so decisions and drinks can be made quickly. The Roman-inspired interior will be simple and timeless, letting the historic building shine. Lighting will be used to create a desirable atmosphere where people look flattering: sconces on the walls and candles on the bar. An eclectic playlist will be a breath of fresh air in a midwestern city, keeping the energy up and introducing guests to music they've never heard before.
Sopa
Sopa is a concept for a European-inspired carry-out window that serves a simple, beautifully packaged combination of coffee, soup, and grilled cheese. Business will thrive in the summer when guests can enjoy outdoor patio seating, as well as during the winter when the menu of simple, cozy comfort food and drinks will be even more appealing.
What will make Sopa extra unique, is the soup program, which will feature recipes submitted by members of the community. A signature tomato soup and grilled cheese will be daily menu staples, while weekly (at a minimum) specials could come from any local who has a great family or original recipe to share. Recipes can be submitted online or in person, and selected recipe providers will have their story on display at the cafe, on social media, and on a blog which could eventually even include short videos of the recipe owners talking about their memories or preparing the soup themselves. Guests will love knowing the story behind their delicious soup, and contributors will love having a way to share personal nostalgia with their neighbors.
Pas Beaucoup
It was always our vision to make a portion of The Carriage House a social retail space that spills into the alley like the little cafes and markets you might find in Paris or Rome. Pas Beaucoup, which means "not much" in French, is our concept for a tiny wine and cheese shop that works in tandem with Sopa and Seaso to establish a quaint, European corner vibe where Sycamore Street meets Grear Alley in OTR.
A rotating selection of wine, cheese, and select novelties will be available to customers looking to pick up the perfect contribution for a dinner party or to sit and enjoy in our private cobblestone alley. The three businesses will support one another and add to the overall experience for guests with endless opportunities for cross-promotion and event hosting. Wines featured in Bar Saeso will be for sale at Pas Beaucoup, while ingredients from Pas Beaucoup might be featured in a grilled cheese or soup special at Sopa.
